Fettuccine - Plain And Simple image

I was in the mood for something simple last night, and know my kids love Fettuccine..so, I whipped up the sauce..it's so easy..boiled the noodles and you have a delicious simple meal... My daughter would eat this every day of the week if I made it... Serve with a salad and garlic bread.. Delicious! My pictures.

Number Of Ingredients 10

1 box(es) fettuccine pasta, prepared el dente
2 clove(s) garlic, minced
3 cup(s) heavy cream
1 cup(s) shredded parmesan cheese
2 teaspoon(s) paprika, i use smoked
1 1/2 teaspoon(s) salt
1 teaspoon(s) fresh ground pepper, or whatever pepper you use
- pinch of nutmeg
- additional parmesan cheese for garnish
3 - 4 - scallion, sliced , including green part ( optional) for garnish

Steps:

  • Prepare pasta according to package directions
  • While pasta is cooking; in a medium saucepan, on medium heat; saute the garlic in a tablespoon of oil, just long enough to extract flavor, do not burn.
  • Add the 3 cups of cream, bring to a simmer, add the paprika, nutmeg, salt, pepper and Parmesan cheese, stirring constantly as so not to scorch. Continue simmering until sauce starts to thicken ( about 10 - 15 minutes ). It may seem too thin, but will thicken as it starts to cool down. If you want it thicker just add some more Parmesan.
  • When pasta is finished cooking, drain well. I add a small amount of olive oil and toss. Plate your pasta; ladle sauce over the pasta, sprinkle with more Parmesan cheese and scallions.. **I don't rinse my pasta, the sauce will adhere better if not rinsed.
  • You can add chicken, mushrooms, peppers, whatever you like..we were just in the mood for simple..
