FETTUCCINE - PLAIN AND SIMPLE
I was in the mood for something simple last night, and know my kids love Fettuccine..so, I whipped up the sauce..it's so easy..boiled the noodles and you have a delicious simple meal... My daughter would eat this every day of the week if I made it... Serve with a salad and garlic bread.. Delicious! My pictures.

Steps:
- Prepare pasta according to package directions
- While pasta is cooking; in a medium saucepan, on medium heat; saute the garlic in a tablespoon of oil, just long enough to extract flavor, do not burn.
- Add the 3 cups of cream, bring to a simmer, add the paprika, nutmeg, salt, pepper and Parmesan cheese, stirring constantly as so not to scorch. Continue simmering until sauce starts to thicken ( about 10 - 15 minutes ). It may seem too thin, but will thicken as it starts to cool down. If you want it thicker just add some more Parmesan.
- When pasta is finished cooking, drain well. I add a small amount of olive oil and toss. Plate your pasta; ladle sauce over the pasta, sprinkle with more Parmesan cheese and scallions.. **I don't rinse my pasta, the sauce will adhere better if not rinsed.
- You can add chicken, mushrooms, peppers, whatever you like..we were just in the mood for simple..

This is a recipe that I created by modifying my mother's recipe. My boyfriend is a fettuccine Alfredo connoisseur and he scrapes the pan every time! I get nothing but rave reviews when I make this dish. I must warn you, this recipe is not for the health conscious. Enjoy!

Steps:
- Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.
- In a large saucepan, melt butter into cream over low heat. Add salt, pepper and garlic salt. Stir in cheese over medium heat until melted; this will thicken the sauce.
- Add pasta to sauce. Use enough of the pasta so that all of the sauce is used and the pasta is thoroughly coated. Serve immediately.

- Cook and drain fettuccine as directed on package.
- Meanwhile, in 10-inch skillet, heat butter and whipping cream over medium heat, stirring frequently, until butter is melted and mixture starts to bubble. Reduce heat to low; simmer uncovered 6 minutes, stirring frequently, until slightly thickened. Remove from heat. Stir in cheese, salt and pepper.
- In large bowl, toss fettuccine with sauce until well coated. Sprinkle with parsley.
