I added 1 whole orange instead of juice, and made it into two loaves instead of one recipe, and now I am glad I did as one would just not be enough. 4 c a/p flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
3 egg, slightly beaten
1 c cranberry juice
1 tsp vanilla
2 1/2 c sugar
1 1/2 c oil (or i substituted 1/2 applesauce)
2 c whole cranberries or cranraisins
1 whole orange pulp rind the whole orange. (remove core)
1 c chopped walnuts
TOPPING
1 c vanilla chips
1/4 c colored sugar

Steps:

  • 1. Preheat oven to 350 degrees and lightly grease two bread pans.
  • 2. Cut up orange and remove core. In a blender or food processor process the orange so that the rind and orange sections are broken down. Add the cranberries and pulse once or twice. Add juice and sugar and pulse again. Be sure to add the juice and the sugar with the cranberries and orange.
  • 3. In a large bowl, mix together oil (applesauce if using) and eggs. Mix in orange and cranberry mixture, and vanilla. In a separate bowl, mix together flour, baking soda, and baking powder. Gradually blend flour mixture into the cranberry mixture. Pour into the prepared loaf pans.
  • 4. Bake for 50 to 60 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack, and cool completely. If making smaller loaves cook for less time.
  • 5. Melt the vanilla chips in the microwave and pour over cooled bread...while still warm sprinkle with colored sugar.
