4 c a/p flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
3 egg, slightly beaten
1 c cranberry juice
1 tsp vanilla
2 1/2 c sugar
1 1/2 c oil (or i substituted 1/2 applesauce)
2 c whole cranberries or cranraisins
1 whole orange pulp rind the whole orange. (remove core)
1 c chopped walnuts
TOPPING
1 c vanilla chips
1/4 c colored sugar

Steps:

  • 1. Preheat oven to 350 degrees and lightly grease two bread pans.
  • 2. Cut up orange and remove core. In a blender or food processor process the orange so that the rind and orange sections are broken down. Add the cranberries and pulse once or twice. Add juice and sugar and pulse again. Be sure to add the juice and the sugar with the cranberries and orange.
  • 3. In a large bowl, mix together oil (applesauce if using) and eggs. Mix in orange and cranberry mixture, and vanilla. In a separate bowl, mix together flour, baking soda, and baking powder. Gradually blend flour mixture into the cranberry mixture. Pour into the prepared loaf pans.
  • 4. Bake for 50 to 60 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack, and cool completely. If making smaller loaves cook for less time.
  • 5. Melt the vanilla chips in the microwave and pour over cooled bread...while still warm sprinkle with colored sugar.

2 cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 tablespoon grated orange zest
1 ½ cups fresh cranberries
½ cup pecans, coarsely chopped
¼ cup margarine, softened
1 cup white sugar
1 egg
¾ cup orange juice

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan. Whisk together flour, baking powder, baking soda, and salt. Stir in orange zest, cranberries, and pecans. Set aside.
  • In a large bowl, cream together margarine, sugar, and egg until smooth. Stir in orange juice. Beat in flour mixture until just moistened. Pour into prepared pan.
  • Bake for 1 hour in the preheated oven, or until the bread springs back when lightly touched. Let stand 10 minutes, then turn out onto a wire rack to cool. Wrap in plastic when completely cool.

I had never really thought to put these two fruits together before, but the cranberries really jazz up ordinary banana bread. The tartness and the sweetness really complement each other. It also makes a great holiday gift.

1/2 cup butter, melted and cooled
2 cups sugar
4 eggs
6 medium blackened bananas, mashed
2 cups fresh whole cranberries
1 teaspoon lemon juice
1 teaspoon vanilla extract
3 cups flour
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees. Grease and flour two 8x4-inch loaf pans.
  • In electric mixer bowl, combine butter, sugar and eggs. Beat until smooth. Add lemon juice and vanilla extract; mix to combine. Stir in bananas and cranberries.
  • In a separate bowl. combine flour, baking powder, cinnamon, and salt. Add to the wet ingredients and stir until moist and combined. Pour batter into loaf pans.
  • Bake at 350 degrees for approximately 60 minutes or until bread tests done. Let cool, then wrap in aluminum foil.
