Favourite Banana Muffins image

Maybe the use of mayonnaise in this recipe seems strange, but I promise, it makes for a fluffy, delicious muffin! Make sure to use real, full-fat mayonnaise, not low-fat or Miracle Whip.

Number Of Ingredients 5

3 large bananas
2/3 cup(s) white sugar
1 cup(s) mayonnaise
2 cup(s) all-purpose flour
1 1/2 teaspoon(s) baking soda

Steps:

  • Preheat oven to 375F.
  • Put peeled, mashed bananas in bowl with sugar and mix until creamed.
  • Add mayonnaise, mix in until incorporated.
  • Sift baking soda and flour together, add to wet mixture and mix until all ingredients are moistened.
  • Fill greased muffin tins to the top, baking 15-20 minutes, or until a toothpick comes out clean.
