Fava Beans with Bitter Greens image

Number Of Ingredients 7

8 ounces peeled dried fava beans, rinsed and drained
1 medium boiling potato, peeled and cut into 1-inch pieces
salt
1 pound chicory or dandelion greens, trimmed
1/4 cup extra-virgin olive oil
1 cup garlic, finely chopped
pinch of crushed red pepper

Steps:

  • 1 Place the beans and potato in a large pot. Add cold water to cover by 1/2 inch. Bring to a simmer and cook until the beans are very soft and falling apart and all the water is absorbed. 2 Add salt to taste. Mash the beans with the back of a spoon or a potato masher. Stir in the oil. 3 Bring a large pot of water to a boil. Add the greens and salt to taste. Cook until tender, depending on the variety of greens, 5 to 10 minutes. Drain well. 4 Dry the pot. Add the oil, garlic, and crushed red pepper. Cook over medium heat until the garlic is golden, about 2 minutes. Add the drained greens and salt to taste. Toss well. 5 Spread the bean puree on a serving platter. Pile the greens on top. Drizzle with more oil if desired. Serve hot or warm. From "1,000 Italian Recipes."
