EGGPLANT RISSOLES image

Number Of Ingredients 7

2 med eggplants
2 T unsalted butter
1/2 c Italian breadcrumbs
1 garlic clove minced
1 egg
1/3 cup Parmesan
salt and pepper to taste

Steps:

  • Preheat oven to 350 1. cut eggplants in half top to bottom. Put them in a shallow baking dish cut side down with a little water about 1/8 in. Bake 1 hour in the oven until soft. 2. Scoop out pulp and combine in a bowl with butter,breadcrumbs, garlic,egg, parmesan cheese salt and pepper.(might need to add more breadcrumbs) 3. shape into balls , place on oiled baking sheet, add tomato sauce if desired, bake 25 min
