EGGPLANT IN GARLIC SAUCE image

Number Of Ingredients 6

3 tbl vegetable or peanut oil
1 medium eggplant
1/2 lb shitake mushrooms
3 large cloves garlic
1 bunch scallions
6 oz of Wegman's Wokery Garlic Sauce

Steps:

  • Stem and half mushrooms. Chop garlic. Cut scallions on a diagonal into half inch pieces. Cut eggplant into 1" cubes. Add oil turning pan to cover bottom evenly, heat skillet on high. Add eggplant, stir fry 5 minutes. Add mushrooms, stir fry 2 minutes. Add garlic and scallions, stir fry 1 minute. Add sauce, stir to coat vegetables. Serve.
