Easy Pleasy Spanish Rice image

This is so delicious and I share it with everyone. I usually make this as a side dish to tacos.

Number Of Ingredients 8

5 slices of bacon, diced.
1/2 c chopped onion.
1/2 c chopped green pepper.
1 clove garlic, minced.
1 c regular long grain rice, uncooked
1 can(s) (10 3/4 oz.) condensed tomato soup
1 soup can of water
1 c salsa, mild or to your liking

Steps:

  • 1. In a 10" skillet, over medium heat, cook bacon till lightly browned.
  • 2. Stir in onion, green pepper and garlic.
  • 3. Cook until tender, stirring occasionally.
  • 4. Stir in rice; cook until rice is slightly browned, stirring often.
  • 5. Stir in soup, water, salsa; mix well.
  • 6. Over high heat, heat to boiling.
  • 7. Reduce heat to low and cover. Simmer for 25 minutes, stirring occasionally. Until rice is tender.
