Easy Pie Crust Cookies image

1 box of rolled pie crusts (2 crusts included with each box)
1/4 cup white sugar
1 Tablespoon cinnamon
3 Tablespoons melted butter

Steps:

  • Preheat oven to 325*F Working with one crust at a time, remove crust from fridge and wrapper. Roll out onto counter. Cut out shapes with your cookie cutter (or just cut into rectangles or tear into pieces) Place on cookie sheet. In a small bowl, mix sugar and cinnamon until well combined. Using a pastry brush, brush each cookie with melted butter. Sprinkle each cookie with a medium amount of cinnamon sugar mixture. Bake for 8-12 minutes or until cookie edges begin to turn golden. Do not over bake! When first crust is used up completely (including scraps) complete the process with second crust.
