Easy Noodles Romanoff image

An easy side dish that is big on flavor. Great with any meat or add shredded meat for a main course. Some recipes call for parmesan cheese, but to me it just tastes like Alfredo. I love this recipe because it is just a bit different than your average cheesy noodle side dish. This is also a great recipe that you can tweak to call...

8 oz package wide egg noodles
8 oz container cottage cheese (low fat okay, not non-fat)
8 oz container sour cream (low fat okay, not non-fat)
1 Tbsp finely chopped onion
1 clove minced garlic
1/2 tsp worcestershire sauce
1 dash(es) hot pepper sauce
1/2 c shredded cheddar cheese (divided in half), or more to taste
1 pinch hot paprika (sweet or regular if preferred)

Steps:

  • 1. Grease or spray a 2 quart casserole dish and set aside. Heat oven to 350 degrees (F).
  • 2. Cook egg noodles according to package directions until al dente. Drain.
  • 3. While the noodles are cooking, mix together in a large bowl the cottage cheese, sour cream, minced onion, garlic, Worcestershire sauce, red pepper sauce and salt. Stir in half of the cheddar cheese.
  • 4. Stir in cooked egg noodles and toss gently to coat. Pour into prepared casserole dish. Top with remaining cheddar cheese, you may add more if desired. Top with a pinch of hot paprika.
  • 5. Bake for 30 minutes, or until heated through and bubbly. Serve warm.
