EASY LOW-FAT, LOW-CARB CORN BREAD image

Number Of Ingredients 12

1 ripe banana, mashed
1 cup Quaker Yellow Corn Meal
¾ cup Wheat Germ
¼ cup white flour
¼ cup sugar
2 tsps. Baking powder
½ tsp. Salt
1 cup skimmed milk
¼ cup vegetable oil
2 egg whites or 1 whole egg, beaten (I use 2 egg whites)
Handful of frozen blueberries (to taste)
Half a dozen broken up pecans (to taste)

Steps:

  • Heat oven to 400 degrees. Grease an 8- or 9-inch loaf pan. Mash the banana in a bowl. Combine the dry ingredients with it. Stir in the milk, oil and egg whites, mixing until dry ingredients are moistened. Pour batter into prepared loaf pan. Bake at 400 degrees for 30 minutes, until top of bread is golden brown. Serve warm. If bread is not served immediately, store in refrigerator and microwave slightly before serving.
