This low carb 'cornbread' contains no corn at all, but you'll fool everyone that tries it! The flavor and texture are spot on! Just 1 net carb per slice!

6 tablespoons butter, melted
⅓ cup heavy cream
3 large eggs
½ cup coconut flour
2 tablespoons sugar substitute
½ teaspoon salt
¼ teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees. Spray a 10 inch cast iron skillet or 8x8 baking dish with non-stick spray.
  • Add the melted butter, cream, and eggs to a mixing bowl and whisk to combine.
  • Add the coconut flour, sugar substitute, salt, and baking soda to the bowl and stir well to combine.
  • Spread the mixture into the prepared dish and bake for 15-20 minutes or until the edges are golden and a tester comes out clean.

This is an adopted recipe and is a lowfat twist on southern cornbread. I still prefer my regular skillet cornbread, but if low fat is one of your requirements you might like this one.

1 cup flour
1 cup cornmeal
1/4 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup plain nonfat yogurt
2 egg whites

Steps:

  • Preheat oven to 400 degrees.
  • Beat egg whites until soft peaks form.
  • Mix dry ingredients together in bowl.
  • Stir in yogurt.
  • Fold in the egg whites.
  • Mix well.
  • Bake at 400 degrees in 8" square or round pan. (I used a cast iron skillet sprayed with cooking spray) for about 20 minutes.

1 cup almond flour (OR 1/2 c almond flour & 1/2 c hazelnut flour)
1 teaspoon baking powder
2 eggs, beaten
2 tablespoons cream
2 tablespoons water
1/4 cup butter, melted
1 teaspoon Splenda sugar substitute or 1 teaspoon honey, substitute

Steps:

  • Preheat oven to 350 Combine the almond meal and baking powder.
  • Add the cream, water, sweetener, and eggs, stir to combine.
  • Add the melted butter, stir to combine.
  • Spray Pam into the muffin tin.
  • Divide the batter amongst 5-6 muffins.
  • Bake for 15-18 minutes until edges are slightly browned and the tops are firm to the touch.
  • Really good with butter& sugar-free, low carb jam or honey.

1 cup flour
1 cup cornmeal
1/4 cup sugar (more or less to taste)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup plain nonfat yogurt
2 eggs, beaten (or 1/2 cup egg substitute)
1/2 cup whole kernel corn, drained (optional)
1/2 cup jalapeno pepper, chopped (optional)

Steps:

  • Preheat oven to 400 degrees F.
  • In a medium mixing bowl, combine dry ingredients.
  • Stir in yogurt and eggs. If using stir in corn and jalapeno peppers.
  • Pour into 8 inch square pan sprayed with cooking spray (or use a cast iron skillet).

This is a low cal modification of my mom's cornbread recipe. Using Splenda instead of sugar and "I Can't Believe It's Not Butter Lite" instead of butter or oil, makes a big difference in calories but not in taste. I just made some to serve with chili and it was great!
