Easy Banana Spice Cake (Eggless) image

Too many bananas? Make this cake to use up 4 of them! ***I just checked on the cake baking, and it looks great. 10 minutes to go.*** But I noticed something awful - 3 EGGS sitting out on the counter!!! I accidentally left the eggs out of the cake. So you can make this without the eggs if you like. I will have to wait until next...

3-4 very ripe bananas
2 Tbsp lemon juice
1 box yellow cake mix
2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/4 tsp cloves
3 large eggs
5 oz water
1/4 c oil

Steps:

  • 1. Preheat oven to 350°F. Grease and flour a Bundt pan (or spray with baker's coating). Mash bananas very well with lemon juice and set aside.
  • 2. In large mixing bowl, stir together cake mix and spices. Add eggs, water, oil, and mashed bananas. Mix with electric mixer for 2 minutes at high speed, scraping bowl occasionally. Pour batter into prepared pan.
  • 3. Bake approximately 45-50 minutes, until pick inserted near center comes out clean. Cool on wire rack in pan for 10 minutes. Invert and remove from pan and cool completely.
  • 4. Use 1/2 a container of your favorite frosting; microwave until it's pourable. Drizzle it over cooled cake. Some suggestions are: Cream Cheese frosting, Lemon, Caramel, or Vanilla.
