DOWN 'N' DIRTY RICE CASSEROLE image

While I have often made dirty rice from a mix, I have never before made it from scratch. This is the recipe that convinced me, probably because of the added cheese! Recipe: recipelion.com Photo: netcookingtalk.com

Number Of Ingredients 12

1 lb ground chuck
1 1/4 c cheddar cheese, shredded
2 stalk(s) celery, chopped
1 medium onion, chopped
1 Tbsp butter
3 c cooked rice
1 can(s) (med.) chopped tomatoes, drained
salt and pepper to taste
1 1/2 tsp garlic powder
1 tsp cayenne pepper
1/2 c milk
1/3 c sour cream

Steps:

  • 1. In a large skillet, brown the ground chuck over medium heat. Drain.
  • 2. In a medium skillet, cook celery and onion in 1 Tbsp. butter for 5-10 minutes over medium-low heat, until almost tender, but not browned.
  • 3. In a large casserole dish, mix all ingredients together except the cheese.
  • 4. Sprinkle the shredded Cheddar over the top of the mixture and bake in a preheated 350-degree oven for 25 minutes or until heated through and cheese is melted.
