This recipe is from one of Williams Sonoma Cooking Classes in 2005. I love these classes. These chops or ham slices are so good you will love to try this recipe on some of your ham slices left from that holiday ham. These are so succulent you will be telling everyone about this recipe- or maybe not- you might keep it to...

Steps:
- 1. Combine flour, baking powder a pinch of salt and corn starch blending well.Set aside. Sprinkle chops or ham pieces with Cajun seasoning on all sides. Dip the chops or ham into the buttermilk and then dredge into flour mixture.
- 2. Preheat oil in deep fryer to 350^ degrees. Once the oil is hot, slide the chops or ham pieces carefully into the deep fryer and cook about 6 to 8 minutes, or until nicely browned, making sure the chops are submerged. Do in batches if needed to avoid overcrowding the fryer.
- 3. Mustard Sauce: Mix all ingredients together. Drizzle over cooked meat just before serving, or serve on the side at the table.
