DEBBIE’S PORK TENDERLOIN RECIPE WITH DATES image

Butterfly the tenderloin.
Put 2 T oil in a pan and sauté 2 cloves minced garlic and chopped dates (about 6 whole dates) until it gets soft. Sprinkle thyme and sage, about ½ tsp each.
Saute till the dates get soft. Throw in some feta cheese (about ¼ lb.) - just enough to mix in. when feta melts, you're done. You can sear the loin first - optional.
Sprinkle pork loin with sea salt or kosher salt, along with thyme and sage. Then stuff the mixture in the loin and put in open roasting pan for about 45 min to 1 hour at 425 degrees

Steps:

  • Use 2 lbs. of tenderloin to serve 4 people.
