CURRIED SHRIMP SCAMPI image

Yield serves 4-8, you can easily adjust amounts

Number Of Ingredients 5

linguine (16oz package should feed 4 people)
olive oil enough to just cover bottom on large skillet
2-3 crushed and chopped cloves of garlic
med/lg shrimp (6-8 per person)fresh chopped, oregano and basil to taste
fresh cut large lemon and lime red curry powder

Steps:

  • Boil noodles to al'dente and strain, keep warm and ready to serve.(add olive oil and pinch salt to water), heat lg skillet to med, add oil, add garlic immediately, dont wait for oil to heat. Stir till you can smell the garlic, add shrimp and herbs. turn only when bottom of shrimp turns white. after you turn them squeeze all juice out of lemon and lime. then sprinkle on red curry powder. when 2nd side turns white flip shrimp one more time then once again after 5-10 sec. remove shrimp and toss pasta in skillet. this is where you would add pasta sauce if you want. arrange plates and serve with garlic bread and salad.
