Amazing Stuffed Manicotti image

This is so delicious and easy to make, but your family will think you spent hours! Another favorite at my house. Easy to make ahead and also freezes well too.

8 oz package manicotti shells
1 c shredded mozzarella and romano cheese
SAUCE:
1 lb ground beed or pork sausage
1 medium diced onion
1 tsp italian seasoning
2 clove garlic-minced
1 can(s) tomato sauce, italian seasoned
1 can(s) crushed tomatoes
1 Tbsp basil
1/4 c cooking wine
FILLING:
1 box frozen spinach-drained
15 oz container ricotta cheese
1/2 c cottage cheese
1/2 c grated parmasan cheese
1 tsp basil
1 egg beaten

Steps:

  • 1. In skillet; brown ground beef or sausage with onion, italian seasoning, and garlic. Drain. Add to sauce pan with sauce ingredients. Simmer over medium heat approx 15 minutes. Set aside.
  • 2. Meanwhile; cook manicotti shells per package directions. Careful not to over cook. Cooking process will continue as it is being baked. Drain and place shells on foil or wax paper. Let cool.
  • 3. In medium sized bowl, combine filling ingredients. Stuff cheese/spinach mixture to fill inside of each shell. Place filled shells into greased casserole dish.
  • 4. Top the cheese filled shells with meatsauce. Cover and bake 30 minutes at 350 degrees. Remove cover and top with shredded italian cheese last 5 minutes of cooking time. Remove from oven and allow to cool 10-15 minutes before serving. Great with garlic bread and tossed salad!
