CUCUMBER, BLACKBEAN, AND MANGO SALAD image

1/2 English cucumber;
1 can black beans;
1 mango, diced;
2/3 cup frozen sweet corn, thawed;
1 7oz jar roasted red peppers, packed in water;
2 tbsp chopped cilantro;
1/2 red onion, chopped;
2 tbsp lime juice;
1 tsp cumin;
1/2 tsp cayenne pepper;
salt and pepper to taste

Steps:

  • Pour black beans into a colander and rinse under cold water. Combine all ingredients in a large bowl. Refrigerate at least one hour prior to serving to allow flavors to permeate the salad.
