Number Of Ingredients 6

~1 lb Sockeye salmon
1-2 Tbsp olive oil
1 Medium Head of broccoli
1 cup Multi colored baby carrots ((Large ones sliced down the middle))
2 Pinches of (Salt)
1 Tbsp Savory spice Cuban spice blend

Steps:

  • Preheat oven to 425
  • Use a pairing knife to cut off broccoli florets. Transfer into a colander and rinse thoroughly under running water .
  • Pad dry florets. Add in baby carrots. Toss these with 1 Tbsp of olive oil, a pinch of salt and 1/2 Tbsp of the Cuban spice blend. Transfer into a baking sheet sprayed with Pam . Ensure it's a single layer
  • Rinse salmon, pad with a paper towel to remove excess water. Generously rub with 1 Tbsp of the Cuban spice blend, add a pinch of salt . Drizzle with olive oil. Add into tray containing vegetables ( move veggies to the side of using a small baking sheet). Bake at 425 for 8 minutes or until salmon easily flakes off. Veggies should be al dente.
  • Remove from oven and enjoy
