Pesto Linguine image

Great side or a light lunch. Wonderful if you grown your own herbs!

Number Of Ingredients 9

1 cup(s) packed fresh basil leaves
1 cup(s) packed fresh parsley sprigs
5 large cloves of garlic
1 cup(s) olive oil, extra virgin
1/2 cup(s) parmesan cheese, freshly grated
16 ounce(s) package linguine
4-6 tablespoon(s) butter, melted
- salt, to taste
- freshly grated parmesan, for garnish

Steps:

  • Position the knife blade in the food processor. Add the first 3 ingredients. Process until finely chopped.
  • Pour the oil in a steady stream through the food chute with the processor running, processing until combined. Add the parmesan cheese and process until blended. Set aside.
  • Cook the linguine according to the package directions. Drain.
  • Combine the linguine, butter, and salt to taste in a large serving bowl; toss. Add the reserved pesto mixture. and toss. Sprinkle with additional Parmesan cheese if desired. Serve immediately.
