CRUSTLESS SAUSAGE AND PEPPER QUICHE image

1/2 pound turkey sausage, cooked and chopped or crumbled
1 cup shredded low-fat cheddar cheese
1/2 cup chopped onion
1/4 cup each diced green and red bell peppers
2 tablespoons whole wheat flour
2 large eggs
2 egg whites
1 cup skim milk
3/4 teaspoon salt
1/8 teaspoon red pepper sauce

Steps:

  • Heat oven to 350°F. Toss cooked sausage, cheese, onion, and peppers with whole wheat flour to combine. Coat 9-inch pie pan with vegetable spray. Add sausage mixture to pie pan. Whisk eggs, egg whites, milk, salt, and red pepper sauce to combine. Pour egg mixture into pie pan. Bake for 35 to 40 minutes, or until toothpick in center comes out clean.
