- 1. In a bowl, mix salmon, egg, buttermilk, seasoning, flour, mayonnaise, cornmeal and onion. Mix well. I
- 2. In a cast iron skillet, heat about 1/4 cup oil. Drop salmon mixture by tablespoonfuls into hot oil and flatten some with back of spoon. Fry for about a 1 1/2 minutes per side or until desired crispiness. Drain on paper towels. Season with additional salt now, if preferred.
- 3. If making sauce, combine everything, mixing well and keep refrigerated until ready to use. Can double recipe if you want more sauce.
