Crispy Turkey Leftovers image

I saw a similar recipe and adapted it to our liking. This is a super way to use up some leftovers in a quick, easy and tasty twist on just the re-heat and serve situation. We love how crispy they are and you can serve them plated with a side or even on a toasted bun for a sandwich !

Number Of Ingredients 12

1 - 2 cup(s) leftover turkey gravy
1/4 cup(s) all purpose flour
2 tablespoon(s) cornstarch
1 egg - lightly beaten
1 tablespoon(s) finely chopped onion
1/8 teaspoon(s) each salt and pepper
3/4 cup(s) leftover mashed potatoes
3/4 cup(s) leftover chopped cooked turkey
2 tablespoon(s) cranberry sauce - with whole berries works best
3/4 cup(s) leftover stuffing
2 tablespoon(s) butter
3 tablespoon(s) oil

Steps:

  • Place leftover gravy into saucepan and heat through. Keep warm.
  • Whisk the flour and cornstarch together in a small bowl or plate and set aside.
  • In a medium bowl, whisk egg, onion, salt and pepper until well blended. Stir in the potatoes, turkey, cranberry sauce and stuffing and mix until well combined.
  • In a large skillet, heat butter and oil over medium-high heat. Scoop mixture into 1/4 cup portions and shape into balls. Roll in flour mixture then place into hot skillet and press to flatten slightly.
  • Fry on each side until golden brown, crispy and heated through - about 4-5 minutes. Remove from skillet and place onto paper towel to drain. Serve hot drizzled with warm gravy.
  • If desired, serve on a toasted bun with some cranberry sauce for a fun hot sandwich !
