Creole Tomato Salad image

Beautiful and refreshing lagniappe to any lunch or dinner menu!

Number Of Ingredients 9

1 lb roma tomatoes
1 onions, vidalia, peeled
1/4 tsp sea salt
2 tsp chives, bunch
4 tsp olive oil, extra virgin
4 tsp red wine vinegar
1 tsp dijon mustard
1 tsp garlic, minced
1 fresh thyme sprig

Steps:

  • 1. To prepare salad, alternate tomato and onion slices on a platter. Sprinkle with salt. Top with thyme and chives
  • 2. To prepare vinaigrette, combine oil, vinegar, mustard, and garlic in a jar. Cover tightly; shake vigorously. Drizzle vinaigrette over salad, and serve at room temperature.
  • 3. Drizzle vinaigrette over salad, and serve at room temperature.
