CREAMY CUCUMBER SALAD image

Number Of Ingredients 7

4 hothouse cucumbers (3-4 pounds)
2 small red onions (thinly sliced)
4 cups plain yogurt
1 cup sour cream
2 tbsp. white wine vinegar
1/2 cup fresh dill (minced)
1 1/2 tsp. black pepper

Steps:

  • 1. Mix cucumbers, red onions and 1 1/2 tbsp. salt. Suspend in colander over bowl. Cover and refrigerate 4 hours or overnight. Discard liquid. 2. Pour yogurt into sieve lined with paper towel and suspend over bowl. Cover and refrigerate 4 hours or overnight. Discard liquid. 3. Toss all ingredients and refrigerate for a few hours to allow flavors to blend. Add 2 tsp. salt or to taste. Salt and pepper immediately before serving.
