4 cucumbers (about 2 1/2 pounds), peeled and sliced into 1/4-inch rounds
1 small sweet onion, thinly sliced into rings
Kosher salt
1/2 cup sour cream
1/4 cup chopped fresh dill
2 tablespoons white vinegar
Freshly cracked black pepper

Steps:

  • Put a large colander in a large bowl. Add the cucumbers and onions to the colander, sprinkle with 1 tablespoon salt and toss until the salt is evenly distributed. Let stand at room temperature for at least 1 hour and up to 2 hours.
  • Transfer the cucumbers and onions from the colander to a paper towel-lined baking sheet and pat them dry with another layer of paper towels.
  • Whisk together the sour cream, dill, vinegar and a few cracks of black pepper in a medium bowl. Add the cucumbers and onions and toss until coated.
  • To make ahead: Salt and pat dry the cucumbers and onions as above, then keep separate from the dressing until ready to serve.

2 small red onions, thinly sliced in half rounds
Kosher salt
4 cups (32 ounces) plain whole-milk yogurt
1 cup (8 ounces) sour cream
2 tablespoons champagne vinegar or white wine vinegar
1/2 cup minced fresh dill
1 1/2 teaspoons freshly ground black pepper

Steps:

  • Mix the cucumbers, red onions, and 1 1/2 tablespoons of salt in a bowl. Pour them into a colander and suspend it over a bowl. Wrap the bowl and colander with plastic wrap, and place in the refrigerator to drain for at least 4 hours or overnight. Discard the liquid that collects in the bowl.
  • Pour the yogurt into a sieve lined with a paper towel and suspend it over another bowl. Wrap the bowl and sieve in plastic wrap and refrigerate for at least 4 hours or overnight. Discard the liquid that collects in the second bowl.

Classic and nothing fancy, but a great summertime salad. Growing up in Michigan, we always had a big garden, as well as tons of tomatoes. This became one of my favorite salads. Now, my Mom used to make it with sour cream back in the days ... but nowadays, I use plain yogurt which I think makes it a bit lighter. However, you can still use sour cream or even a mix of the two if you prefer.

  • Dressing -- Mix the yogurt, shallot. garlic, sugar, salt and pepper in a small bowl and set to the side.
  • Salad -- In a medium bowl add the cucumbers and tomatoes. Now, if you can't find a seedless cucumber, use a "regular" cucumber and lightly seed it. .
  • Add the dressing to the salad along with the fresh dill and toss lightly.
  • Serve -- I love to serve mine over a bed of fresh greens and broiled fish on the side. ENJOY!

Creamy No-Mayo Cucumber Salad image

This cucumber salad makes a nice crunchy side dish that pairs wonderfully with summer grilling.

6 large cucumbers, peeled and thinly sliced
1 tablespoon salt
1 cup apple cider vinegar
½ (12 fluid ounce) can evaporated milk
2 tablespoons vegetable oil
2 teaspoons salt
freshly ground black pepper to taste
½ sweet onion, chopped

Steps:

  • Place cucumbers into a large bowl with a lid, mix in 1 tablespoon salt, and cover. Refrigerate to let salt draw out excess moisture, 2 to 3 hours. Drain liquid and squeeze as much moisture as possible out of cucumbers; transfer to a large salad bowl.
  • Mix cider vinegar, evaporated milk, vegetable oil, 2 teaspoons salt, and black pepper in a jar, shaking it to thoroughly combine. Pour dressing over cucumbers and stir in onion. Refrigerate at least 4 hours (overnight for better flavor).
