Number Of Ingredients 5

4 1/2 cups all purpose flour
2 packages (5 teaspoons) dry active yeast
2 teaspoons salt
4 Tablespoons vegetable oil
1 1/2 cups warm water (see note below)

Steps:

  • Using a mixer with dough hooks, place flour in mixing bowl. Layer yeast, salt, oil and water over flour. Mix on lowest speed until all ingredients are blended. Turn mixer to medium speed and mix for 16 minutes. Remove dough from mixer and place in a large covered container. Refrigerate for 24 hours. Remove from frig, uncover & let stand for at least 2 hours. Pinch off a piece of dough about the size of a large biscuit. Roll dough piece on a floured surface to the thickness of a very thin pie shell, about 1 1/6 inch. Place on a standard baking sheet. Poke holes in dough with a fork and cut into desired size and shape with a pizza cutter. Bake in a 450 degree preheated oven for 6 to 8 minutes or until light brown. Repeat with remaining dough. Yield depends on size of crackers. Note: If you wan to use cake yeast, substitute 1/2 ounce yeast wet by weight and 1 cup water for the 2 packets of dry yeast and 1 1/2 cups water.
