COUSCOUS WITH GRILLED VEGETABLES AND HERBS image

Number Of Ingredients 11

9 oz couscous
1 1/3 cups cold water
3 red bell peppers (or 1 jar marinated red peppers, drained)
1 handful of asparagus, trimmed
2-3 small zuccini
1 small bunch of scallions, sliced
2-3 chillies, seeded and finely sliced
3 good handfuls of mixed fresh herbs (basil, cilantro, parsley, thyme, mint, etc.)
2 olive oil and lemn juice dressing recipes
salt and pepper
red wine vinegar

Steps:

  • 1. Place the couscous in a bowl with the cold water. 2. Grill the vegetables. Peel and seed the peppers and roughly chop. Slice the zucchini. Roughly chop the asparagus. 3. Add the grilled vegetables, scallions, chillies and herbs to the couscous and mix well. Add the dressing and toss well. Season with salt and pepper. Add a dash of red wine vinegar.
