1 medium onion, cut into wedges
4 medium potatoes, peeled and quartered
1 lb baby carrots
3 c water
3 clove garlic, minced
1 bay leaf
2 Tbsp sugar
1/2 tsp pepper
2 Tbsp cider vinegar
1 corned beef brisket with spice packet (2-1/2 to 3 pounds) cut in half
1 small head cabbage, cut into wedges

Steps:

  • 1. Place the onion, potatoes, and carrots in a 5-quart slow cooker or Crock Pot.
  • 2. Combine water, garlic, bay leaf, sugar, vinegar, pepper, and contents of spice pack; pour over vegetables.
  • 3. Top with brisket and cabbage.
  • 4. Cover and cook on low 8-9 hours. Remove bay leaf before serving.
