CORNBREAD WITH CRANBERRIES image

1 cup stone ground yellow cornmeal
2/3 cup white flour
1/3 cup whole wheat flour
1/4 cup sugar
4 teaspoons baking powder
1 cup milk
1 egg, lightly beaten
1 tablespoon vegetable oil
1/3 cup dried cranberries, roughly chopped

Steps:

  • Preheat oven to 400. Mix together dry ingredients. In a separate bowl, mix together wet ingredients. Combine all ingredients (adding wet to dry) . Bake in a sprayed 8.5" loaf pan 30-35 minutes, or in a sprayed muffin pan 20-25 minutes
