COOKED ESCAROLE
I can't remember which food network show I got this idea from. I am sure this is not the exact recipe,in fact it may not be even close but this dish turned out very tasty and will become a part of our monthly recipes.

Steps:
- 1. cook bacon in heavy skillet
- 2. drain all but 3 tbsp of fat from pan.
- 3. reheat the 3 tbsp of fat,add sugar and cook to smooth and bubbly
- 4. VERY CAREFULLY add vinegar to pan whisk until smooth.
- 5. Add Escarole,crumbled bacon and pepper flakes.
- 6. cook till lettuce JUST starts to wilt, remove from heat
- 7. serve hot
