Steps:
- 1. In a large pot add 2 cups of water and the collard greens and bring to a boil. Turn the heat to low, cover the pot and simmer for about 15 minutes. Drain the greens, reserving the cooking water and set aside until needed.
- 2. Set a large pan over medium high heat and added the butter or oil. Add the onions and cook for 7 - 10 minutes, then stir in the garlic and ginger.
- 3. Now you are going to add the drained greens, 1 tbsp butter or oil and the reserved cooking water into the pan and simmer, uncovered on medium high heat 15 minutes.
- 4. Add the green pepper, lemon juice, salt, and spices and cook for 5 more minutes.
