COCONUT OATMEAL CAKE image

I love checking out tea rooms and small cafes ... and have found some of the most amazing dishes. This recipe was a surprise as Oatmeal Cake is rarely found on a menu; couldn't wait to get home to try it for myself. Easy to make, and yummy to eat !!

Number Of Ingredients 18

1 cup(s) rolled oats (not instant)
1-1/4 cup(s) boiling water
8 tablespoon(s) unsalted butter,slightly softened
1/2 cup(s) sugar
1 cup(s) brown sugar
2 - eggs
1 teaspoon(s) vanilla
1-1/2 cup(s) flour
1 teaspoon(s) baking soda
1 teaspoon(s) cinnamon
1/4 teaspoon(s) nutmeg
1/2 teaspoon(s) salt
TOPPING:
1 cup(s) shredded coconut, packed
5 ounce(s) butter
2/3 cup(s) brown sugar
1/4 cup(s) light cream
2/3 cup(s) walnuts, chopped

Steps:

  • Preheat oven to 350. Lightly butter 9" round cake pan.
  • Place oats in a bowl. Add bowling water and let stand 20 minutes.
  • Cream butter and sugars. Add eggs and vanilla and stir well. Add rolled oats. Add dry ingredients.
  • Pour batter into cake pan. Bake 40 minutes, or until toothpick comes out clean.
  • TOPPING: On a cookie sheet, spread out coconut and bake until golden brown - about 4 minutes. Cream butter and then add brown sugar. Stir in cream, nuts and coconut. Spread on cooled cake.
