Soup with Carrot and Chicken image

Number Of Ingredients 5

2 cups chicken broth
1 cup tomato or vegetable juice
1/4 cup long grain rice
1/2 boneless chicken breast, cooked and cut into 1/2 inch dice
Green onion, thinly sliced

Steps:

  • Bring broth, juice and rice to a boil and simmer for 15 minutes. Add cooked chicken and simmer 5 minutes longer. Ladle out and garnish with green onion.
