CITRUS SHRIMP, RICE & BLACK BEAN SALAD image

Number Of Ingredients 14

1 cup water
1/2 teaspoon salt
2x1 inch strips orange and lime zest
3/4 pound shrimp
1/2 cup long grain rice
1/4 cup fresh orange juice
2 tablesppns fresh lime juice
2 tablespoons fresh orange juice
1/2 teaspoon ground cumin
1/8 teaspoon dried hot red pepper flakes
1/ cup shredded romain lettuce
1/2 cup fresh coriander
1 cup black beans (rinsed & drained)
1 red bell pepper (diced)

Steps:

  • boil water, salt & simmer zests. Transfer zests to cutting board. Add shrimp to water, simmer covered for 2 min. transfer shrimp to colander Stir rice into water. Cook covered over low heat until liquid absorbed. Julienne zests and stir in lime juice, orange juice, vinegar, cumin, red pepper flakes. 1/2 shrimp lenthwise and add to zest mixture. Chill. Add rice, beans & coriander.
