Citrus, Almond & Spinach Salad image

Number Of Ingredients 10

1/3 cup kumquats, thinly sliced & seeded
2 1/2 tablespoon Seasoned rice vinegar
2 tablespoon shallots, finely chopped
1 tablespoon vegetable oil
2 teaspoons fresh ginger, peeled & minced
1/2 teaspoon Asian sesame oil
5 ounces baby spinach (consider doubling)
1/2 cup almonds, sliced & toasted
1/4 cup cilantro, chopped
1 cup mushrooms, sliced (optional)

Steps:

  • Step 1: Make dressing by chopping 1 Tablespoon of kumquats and mixing with the next five ingredients in a large salad bowl.
  • Step 2. Add the rest of the ingredients, including the remaining kumquats and mushrooms if desired.
  • Step 3: Peel and separate segments of a grapefruit, blood orange, mandarins or tangerines, and a navel orange or any similar mixture.
