Chunky Apple Cake image

This one the grand prize in "Absolutely Apples" Taste of Home contest in 2006. Debi Benson of Bakersfield, California was the winner. Thanks to Debbi for a delicious, easy cake. I make it often.

Number Of Ingredients 14

1/2 c butter, softened
2 c sugar
1/2 tsp vanilla extract
2 eggs
2 c flour
1 1/2 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt
1/2 tsp baking soda
6 c chopped peeled tart apples
BUTTERSCOTCH SAUCE:
1/2 c packed brown sugar
1/4 c butter, cubed
1/2 c heavy whipping cream

Steps:

  • 1. In a large mixing bowl, cream the butter, sugar and vanilla. Add eggs, one at a time, beating well after each addition.
  • 2. Combine flour, cinnamon, nutmeg, salt and baking soda; gradually add to creamed mixture and mix well (batter will be stiff).
  • 3. Stir in apples until well combined.
  • 4. Spread into a greased 13 X 9 baking dish. Bake at 350 degrees for 40-45 minutes or until top is lightly browned and springs back when lightly touched. Cool for 30 minutes before serving.
  • 5. For the butterscotch sauce: In small saucepan, combine brown sugar and butter. Cook over medium heat until butter is melted. Gradually add cream. Bring to a slow boil over medium heat, stirring constantly. Remove from the heat. Serve with cake.
