CHRIS' SPAGHETTI AND MEATBALLS image

2 lg cans Italian tomatos
1 lb gr. beef
1 lb. gr. pork
fresh basil
fresh oregano
parsley
fennel seed
mozarella
parmesan
2-3 cloves garlic
whole milk
white bread
1 lg onion
olive oil

Steps:

  • Heat liberal amout of oil in each pan and add 1/2 diced onion in each. After soft, microplane garlic Cut crusts off bread and soak in milk (1 slice for each lb. of meat) Add chopped parsley to meatball pan, when onions have a little color add to meat Add 2 T fresh basil, 1 T oregano, 1 T fennel seed to meatball mixture, microplane 1 T cheese to mixture. Squeeze out bread and add to mixture with 1 egg. Liberal pepper and not as much salt Mix well with spoon, heat oven to 350 Wipe out pan with paper towel,get nice and hot, put meatballs on side Sear on both sides until good color Add slice of mozarella on each meatball, cover with sauce, microplane parmesan, drizzle olive oil, bake for 15 minutes Sauce-- Hand smash tomatos into pan with juice, salt and pepper, towards end of sauce, microplane parmesan Drain pasta and add to sauce left in pan over low heat
