2 large eggs
1/3 c honey
1/2 c canola oil
1/2 c brown sugar, firmly packed
1 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp salt
1 tsp instant coffee granules
1/3 c cocoa powder
1 2/3 c all purpose flour
2 c zucchinie, unpeeled, shredded
1 1/4 c semi sweet chocolate chips

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Grease loaf pan and dust with cocoa powder.
  • 3. In mixing bowl beat on low speed the following ingredients in order given. Eggs, brown sugar, oil, honey, and vanilla.
  • 4. In another bowl mix dry ingredients: salt, baking soda, baking powder, cocoa powder, flour, and coffee granules. Stir with whisk until combined.
  • 5. Add dry ingredients to wet ingredients. Mix just until combined. Do not overbeat.
  • 6. Add shredded zucchini to mixture. Again, mix just until combined. Do not overbeat.
  • 7. Stir in 1 cup of chocolate chips by hand. You can also add nuts here if you like.
  • 8. Pour into prepared pan. Top with remaining 1/4 cup chocolate chips.
  • 9. Bake at 350 for 55-60 minutes or until done. Test for doneness with a toothpick.
  • 10. Remove from oven and let cool 10-15 minutes before removing from the loaf pan. Let cool completely on a wire rack.
  • 11. Serve as is or slather with butter, your favorite frosting, cream cheese or whip cream.
