Steps:
- In large saucepan, heat oil, add onion and garlic, cook until tender but not browned. Add zucchini and stir fry for 2-3 minutes, till slightly cooked but not mushy. Remove from heat. In a separate bowl, beat eggs. In a large bowl, mix together grated chees, eggs, cornmeal, and onion/zucchini mixture. Add oregano, cumin, pepper. Mix well. Pour into a greased 8x8 square baking pan and bake at 325 degrees until a toothpick comes out clean when inserted. Cut into bite-sezed pieces. Serve hot.
