1 beef tenderloin roast (2 pounds)
2 teaspoons canola oil
3 teaspoons coarsely ground pepper
3 garlic cloves, minced
2-1/2 teaspoons brown sugar
1 teaspoon salt
1 teaspoon ground coriander
1/2 teaspoon ground chipotle pepper
1/4 teaspoon cayenne pepper

Steps:

  • Brush beef with oil. Combine the remaining ingredients; rub over meat. Cover and refrigerate for 2 hours. , Place on a rack coated with cooking spray in a shallow roasting pan. Bake, uncovered, at 400° for 45-55 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 10 minutes before slicing.
