CHILI WITH BOURBON image

Number Of Ingredients 12

1/4 cup olive oil
3 cloves garlic, thinly sliced
2 medium onions, diced
1.5 lbs of lean ground beef
3 cups canned crushed tomatoes
2 lbs home-cooked kidney beans
1/2 teaspoon pepper
2 tablespoons chili powder
1/8 teaspoon ground cumin
1/8 teaspoon dried oregano
2 ounces bourbon
salt to taste

Steps:

  • Heat the oil in a large skillet and saute garlic and onions until translucent. Remove and set aside. Turn heat to high; brown the meat in the skillet. Turn the heat down, return the onions and garlic to the skillet, add the tomatoes, beans and seasonings. Mix well. Bring to a simmer and simmer for 30 minutes. Add the bourbon, taste for seasonings, adjust if desired. Simmer 5 more minutes.
