Chicken -Pasta -Spinach and Garbanzo Beans image

This was dinner tonight. Made it in my electric skillet. Very delicious!

Number Of Ingredients 18

4 tablespoon(s) olive oil,divided
1 small onion diced
2 stalk(s) celery, sliced bite size
1 teaspoon(s) ea. salt, pepper, and crushed red pepper
1 box(es) 16 oz. bow tie pasta or your favorite
16 ounce(s) bag baby spinach
1/2 cup(s) garden peas (i added these because they were leftovers)
2 can(s) garbanzo beans, drained and rinsed
1 cup(s) pasta water plus 2 teas. chicken soup granules
1 teaspoon(s) ea. seasoned salt, garlic powder and basil
2 teaspoon(s) cornstarch
1 pinch(es) rosemary, dried
3 ounce(s) cream cheese, room temperature
1/4 cup(s) pecorino regino grated cheese
1/2 cup(s) grape tomatoes
6 medium pieces cooked chicken tenders, diced (left from my oven bbq )
2 tablespoon(s) feta cheese, crumbles, optional for garnish
1/4 cup(s) cheddar cheese, optional for garnish

Steps:

  • Heat skillet to 350^. add 2 Tablespoons of the olive oil when hot. Add onion and celery. Put the pot of water on for the pasta, bring to a boil and add the pasta cook for 8 minutes, drain and put back in the pan.
  • While pasta is boiling , remove 1 cup of the pasta water,pour into a small saucepan.Set aside. Stir onion mixture until golden. Add spinach and remaining olive oil over top. Stir to coat. Cook until it wilts.
  • To the small saucepan with the pasta water add 2 teaspoons of chicken soup granules,(Or you can just use 1 cup chicken broth- I didn't have any),and the cream cheese, cornstarch,pecorino regino, seasoned salt, basil, rosemary and garlic powder.. heat over low heat until cheese has melted and blended.
  • Add cooked pasta, garbanzo beans,tomatoes, chicken and saucepan mixture to the skillet with the spinach mixture; stir to combine. Heat through. Sprinkle top with cheeses for garnish, if desired. This great warm or cold. Always good the next day.
