CHICKEN DIVAN CREPES image

Yield 8 crepes

2 tablespoons butter
2 tablespoon flour
1 cup low-sodium chicken broth
2 teaspoons Worcestershire Sauce
1 1/4 cup grated sharp cheddar cheese, divided
1 tablespoons light sour cream
12 oz broccoli, cut into flowerets, microwaved with a splash of water for 1 minute, and allowed to stand, covered for 5 minutes
1 1/2 cups cooked, shredded chicken
8 crepes

Steps:

  • Melt butter in a microwaveable dish with container. Whisk in flour and microwave at 60% for 60 seconds or until bubbles up and smells cooked. Gradually whisk in Worcestershire and Chicken Broth. Microwave for six minutes at 50% or until thickened, removing to stir every 2 minutes. Stir in 1 cup cheddar cheese until melted. Stir in sour cream. Lay the chicken and broccoli down down the centers of 8 crepes. Cover with 2 tablespoons of the cheese sauce. Fold one side of each crepe over the filling and then fold other side over, overlapping the first fold. Place seam-side down in an oven proof dish or individual dishes. Drizzle the crepes with the remaining cheese sauce and sprinkle with the remaining cheddar cheese. Bake at 350F for 20-30 minutes until hot and cheese is melted.
