15 ounces kidney beans, drained and rinsed
1 garlic clove
1 medium onion
1 teaspoon italian seasoning
2 1/2 lbs skinless chicken breasts
8 ounces tomato sauce
1/4 cup vinegar (cider or white)
1 teaspoon sugar
salt and pepper (to taste)

Steps:

  • Dice tomatoes and crush the garlic.
  • Chop the chicken
  • In large pot or pan, cook chicken until almost done.
  • Add tomato sauce, vinegar, onion, garlic, seasoning, sugar, salt and pepper.
  • Simmer for about 30-40 minutes or until chicken is tender.
  • Add kidney beans and simmer for 5-10 more minutes.
