Chicken A' LA King image

Looking for a recipe for this? I know Sandy Mika was and found one in my mom's old cookbook from '1967' . I also remember my mom making this and I always loved it as well.

Number Of Ingredients 10

1 Tbsp butter
1 Tbsp all purpose flour
dash of white pepper
1/4 tsp salt
1/2 tsp paprika
1 c milk or diluted evaporated milk
1/4 c cream
1 c cooked chicken, cut into pieces
2 green olives
1 pimento, chopped

Steps:

  • 1. Melt butter in top of double boiler, blend in flour, add pepper, salt and paprika.
  • 2. Add milk and cream gradually, stirring constantly until thickened. Beat well. Add chicken, olives and pimento.
  • 3. Cook for 15 minutes and serve on toast or baking powder biscuit , in Patty Shells or Bread or Toast or Croustades.
  • 4. Variations: Add 1 Tablespoon sherry. Omit olives. Add 1/2 cup mushrooms and 1 tablespoon chopped green pepper. Peas, carrots or corn may also be added. Could use turkey, tuna, or rotisserie chicken could be used as well.
