Chewy Chocolate Cookies image

The method that Kathryn uses to melt the chocolate instead of using cocoa powder in this recipe makes for a deliciously fudgy cookie. The outside has a crisp crust and the inside is chewy with chunks of chocolate. These are soooo good!

Number Of Ingredients 8

8 oz semi-sweet chocolate
4 Tbsp butter
2/3 c flour
1/2 tsp baking powder
2 large eggs
3/4 c light brown sugar
1 tsp vanilla
12 oz package semi-sweet chocolate chunks

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Melt 8 oz. semi-sweet chocolate and butter.
  • 3. Whisk together flour and baking powder.
  • 4. Beat eggs, brown sugar and vanilla on high speed until light and fluffy.
  • 5. Reduce speed to low and add melted chocolate.
  • 6. Mix in flour until just combined. Stir in semi-sweet chocolate chunks.
  • 7. Drop by heaping tablespoon on parchment lined baking sheets.
  • 8. Bake, rotating sheets halfway through, until cookies are shiny and a bit soft in the center, 12 to 15 minutes.
  • 9. Cool on baking sheet 10 minutes; transfer to wire rack to cool completely. Enjoy!
