Cherry-Glazed Cornish Hens image

This recipe requires minimum effort for maximum return, featuring Cornish game hens roasted with a warm glaze of cherry preserves mixed with Hunter Sauce (a brown sauce with tomatoes, shallots and mushrooms).

2 Cornish game hens
1 cherry preserves (1 cup)
1 packet Hunter Sauce mix

Steps:

  • Heat oven to 400ºF. Tie game hens' legs together, rub each hen with 1⁄2 tsp oil, and sprinkle with salt and pepper. Place in stovetop-safe roasting pan.
  • Roast hens 40 minutes. Melt 1⁄2 cup preserves; brush hens with some. Roast 10 minutes; brush again with melted preserves. Roast 10 minutes more until instant-read thermometer reads 165°F.
  • Remove hens to serving platter; tent with foil. Whisk 1 cup water, the sauce mix and the remaining preserves into drippings in roasting pan. Place over medium heat, stir to dissolve browned bits and simmer until a bit thickened. Use kitchen shears to cut hens in half; serve with sauce.
